Breakfast   Arugula Bacon and Egg Sandwich

Ingredients

Instructions

2 cups of thinly sliced onions

4 slices of bacon

1 tablespoon of water

1 tablespoon of butter

small amount of sugar

Wheat bread or thin bread

2 eggs

salt/pepper

Arugula

 

1. Cook bacon and remove from pan. Add the onions to the pan. Do not discard the the oil from the bacon. Add water and dash of sugar and cook for 2-5 mins until onions are brown. Some like it with Tabasco, just a few drops while cooking.

 

2. Cook eggs on separate pan. Use cooking spray. Low-med heat and cover until done. Takes about 2-4mins.

 

3. Place wheat or flat bread on a pan on a pan and heat on med to high temp for 2-3 mins each side.

 

4. Make a sandwich: bread, egg, slices of bacon, onions and arugula. See Picture

Dinner  Salmon with Ponzu

Ingredients

1. Make the salmon fillet on a skillet using the sesame oil.

2. Mix all the other ingredients and pour on fillet when done.

3.Let it stand for 10 minutes.

                                            Enjoy!

 

1/4 lower-sodium soy sauce

2 tablespoons of orange

2 tablespoons of mirin ( sweet rice wine)

1 tablespoon of lime juice

1 tablespoon of sesame oil
